These healthier Oh Henry bars are full of that perfect salty & sweet combo you love in an Oh Henry bar but with better for you ingredients. This recipe is refined sugar-free, gluten, grain & dairy-free & can also be made vegan with a few tweaks!

DAIRY + GLUTEN + REFINED SUGAR-FREE + NO BAKE Healthier Oh Henry Bars

These healthier Oh Henry bars are made without any gluten, dairy or refined sugars. I sweetened them up a bit with a bit of maple syrup & some dark chocolate. They are the perfect combination of salty & sweet with the pink salt & all-natural peanut butter as well!

CAN I MAKE THESE Healthier Oh Henry Bars VEGAN?

I did include collagen in this recipe for an added protein punch, however I think it could work with your preferred vegan protein powder of choice but you might just need to use less! Collagen dissolves pretty well I find when baking so when subbing another protein powder in place of it you will often need to use less. I would recommend adding 1 tbsp at a time until a dough forms that is not too sticky.

I have only tried this recipe so far with collagen so if you do use an alternative please share in the comments so others will know what works well for this recipe!

If you don’t have any protein powder you can also try adding more almond flour or coconut flour in place of the protein, but again, I haven’t tried this yet myself, so please let me know if you do! Like I mentioned with the vegan protein, I recommend adding 1 tbsp at a time & mixing after each addition until you the formation of a dough that can be rolled out into bars. Careful not to add too much flour as this can create a dry final product.

The last think you want to keep in mind when making these vegan are the chocolate chips! You are going to want to make sure your chocolate chips are dairy-free/vegan.Thisis my favourite brand for dairy-free or vegan baking!

HOW TO STORE THESE Healthier Oh Henry Bars

I store these healthier Oh Henry bars in an air-sealed container in the fridge or the freezer. After they have set I move them from the plate & store them in a bag or glass container, covered in the fridge! You could also store them in the freezer, where they will last longer & remove from the freezer as desired. Note: if you do keep them in the freezer, I recommend taking them out 5-10 minutes before you want to enjoy them, so they can warm up slightly!

Ingredients you will need:

Nougat Filling

  • all-natural peanut butter
  • pink salt
  • vanilla extract
  • maple syrup (or honey)
  • avocado oil (or melted coconut oil)
  • collagen peptides (for a vegan option you can use almond flour, coconut flour or your preferred vegan protein of choice*. Start with adding 1 tbsp almond, coconut or vegan protein at a time & continuing to add until the mixture becomes thicker, but not dry & is able to be rolled into a bar.)

Peanut Layer

  • dry roasted peanuts (salted or unsalted will work, if using unsalted you may want to add another pinch of pink salt to the nougat layer)

Chocolate Topping

  • dark chocolate (I would start with 1/2 a cup & add more if needed depending on how thick your chocolate layer is, you may need up to 1 + 1/3 cups) (I like thesefor dairy-free &thesefor sugar-free)
  • avocado oil (or coconut oil)

Nougat Filling

  • 1/2 cup all-natural peanut butter
  • 1/4 tsp pink salt
  • 1/2 tsp vanilla extract
  • 2 tbsp maple syrup (or honey)
  • 2 tbsp avocado oil (or melted coconut oil)
  • 1/4 cup collagen peptides (for a vegan option you can use almond flour, coconut flour or your preferred vegan protein of choice*. Start with adding 1 tbsp almond, coconut or vegan protein at a time & continuing to add until the mixture becomes thicker, but not dry & is able to be rolled into a bar.)

Peanut Layer

  • 1/23/4 cup dry roasted peanuts (salted or unsalted will work, if using unsalted you may want to add another pinch of pink salt to the nougat layer)

Chocolate Topping

  • 1 cup dark chocolate (I would start with 1/2 a cup & add more if needed depending on how thick your chocolate layer is, you may need up to 1 + 1/3 cups) (I like thesefor dairy-free &thesefor sugar-free)
  • 1 tbsp avocado oil (or coconut oil)

Instructions

Nougat Filling

  1. In a large bowl add the peanut butter, vanilla, pink salt, avocado or coconut oil, & maple syrup or honey.
  2. Mix together well & then add the collagen (or almond flour, coconut flour or vegan protein of choice 1 tbsp at a time) until smooth & creamy.
  3. Take a little piece of the dough at a time & roll into the size of bar you want to make.
  4. Add the dry roasted peanuts into the dough & all around it, pushing them in slightly to prevent them from falling out.
  5. Continue until all the dough is finished, placing each bar on a plate lined with parchment paper & placing them into the freezer until they are very firm (at least 30 minutes).

Chocolate Topping

  1. Melt the chocolate & oil over low heat on a stovetop or in the microwave in 15 second intervals, mixing well each time, careful not to burn the chocolate.
  2. Dip the chilled bars into the chocolate, coating them well & placing them back onto the parchment paper lined plate. If you don’t want much chocolate on them you can also drizzle the chocolate over the bars.
  3. Continue until they are all coated & place them back in the freezer for at least 15 minutes or until the chocolate has hardened.
  4. Store the bars in the fridge or freezer. Note that if you store them in the freezer I suggest taking them out 5-10 minutes before you want to enjoy them so they can warm up.
  5. Enjoy!

Notes

*I like using collagen peptides because they dissolve well & are flavourless.
