This was the best meatloaf I've ever made. My parents loved it.I don't understand all the comments about it being "too fiddly" or time consuming. If you have a garlic press and just tear off a handful of parsley and put it in the blender there's not even any knifework. Took me maybe a half hour to get it into load form and after that it's all the oven's job. The ends of my bacon did get a little over-browned, might go thick-cut next time.

I've made this three times and it never fails to satisfy. We don't use the Cuisinart, just a whisk. It's terrific and doesn't need to be fussy. Great flavor, great nutrition. THANKS! We give it 5 stars

The three hour Meatloaf is what I like to call this..... the first time we made it... it took us four hours.... I told my husband that this better be worth all the time and effort..... and it was..... we wish we had made more sauce.... So for the second time, we made extra sauce. We find it easiest to divide and conquer on this recipe. He works on the onions and garlics and I work on the sauce and prepping the rest. We come together when it's time to mix all the ingredients together. Hopefully, it starts to take less time..... but I'm sure the fact that we are using Costco amount of meat has added to it.... We also do not do the bacon addition, no need to add it as it is amazing without (so long as you have extra sauce).

I never leave reviews, but I felt compelled to for this meatloaf recipe because I can't believe anyone would give it less than 5 stars!! I was hesitant to make this because of the 3.5 star rating, but I'm SO GLAD I did, because it's the best meatloaf I've ever had. Can't wait for my leftovers for lunch today!

I found this recipe years ago, because I had never really had or made meatloaf. I am so happy to have found this, thank you, BA!For this recipe I will sub parsley with a bunch fresh sage, and I remove the parmesan, just personal preference. I find the sage just takes it to a new place. I will sometimes use a high quality BBQ sauce if I'm short on time, but it's best with the home made sauce.

I make this one frequently, although often just skip the bacon. It's delicious without. I have never been able to figure out why I'm supposed to use a blender to combine chicken stock, 2 tablespoons of the ketchup mixture and parsley though! Forget that step - there's no use in getting your blender dirty for that.

I like the barbecue sauce and bacon strips, but making the loaf itself is overly complicated. There is no need for a food processor or blender, too many steps and things to wash up. The whole process could be greatly simplified. So just make your favorite meatloaf plus this barbecue sauce and bacon.

I made this because I have used recipes from Bonappetit many times with good luck. I wanted to cook something for friends who had been sick for awhile. It was terrible. Seeing, it only had 3.6 stars should have warned me. My friends who I wanted to do something nice for could not eat it. I didn't like it myself but what I kept I ate because I don't like to waste. However, my dear friends threw theirs away. Bonappetit, you have gone downhill. I was very, very disappointed.

I'm a guy and a pensioner if that makes any difference. The recipe is a little "fiddly" but it isn't that hard to make if you take your time. The sauce is pretty tasty, and the broth seems to make a lot of difference (I may try a different bullion the next time). It forms well, and the bacon seems to help it hold it's shape. Taste wise it is a very good recipe which I will use again. The hand mixing seems to make it a little more dense, so next time I'll try to fold it in instead of the "mash it, kill it" method. Overall, a keeper!

Let me begin by saying that I have never liked meatloaf. At all. I made this for my parents because they do. My daughter and I took a taste...let me tell you, the sample we took was delicious.

The ketchup sauce is delicious and the meat loaf has a good texture, not too oily and not definitely not dry and it was easy to make.

I don't understand the low reviews on this one at all, it's a fantastic, flavorful recipe and the free-form method not only helps keep it from drowning in it's own grease, but it also browns fantastically, which further enhances the flavor. The internet is weird. It's probably one of those things where somebody is like "I SUBSTITUDED ALL OF THE INGREDIENTS FOR RED BULL AND MUSTARD AND ALSO MICROWAVED IT FOR EIGHT MINUTES INSTEAD OF BAKING IT AND IT WAS THE WORST CHOCOLATE CHIP COOKIE I EVER MADE, F MINUS"
